Best Eggplant Dish EVER - Turkish Stuffed Eggplant KARNIYARIK

These lovely people, with their exquisite ways with small animals, and their astonishing expertise at what I would call campfire cooking, are Azeris, a Turkish people, living in Azerbaijan. To be frank but not invidious, they are peasants (close to the earth)--but, one hastens to add, they are not stupid, nor apparently unclean, and they are not without charm and dignity. But, Jeezuz-alas, they don't seem to have an abundant source of clean fresh water....
